Oreo vanilla pudding with salted caramel




Ingredients:


Oreo ( crushed )                        400 gms

Butter                                          2 tbsp


For vanilla pudding: 


  • Sugar                                          1/2 cup
  • Corn flour                                   1/2 cup
  • Salt                                              1/2 tsp
  • Whole milk                                  4 cups
  • Egg yolk                                      4 
  • Vanilla Essence                          1 tsp
  • Cinnamon (optional)                  1 tsp


For salted caramel:


  1. Sugar                                           1/2 cup
  2. Cream                                         1cup/200ml
  3. Vanilla Essence                           1 tsp
  4. Coarse salt                                  1/4 tsp
  5. Butter                                            4 tsp



Instructions:



For Biscuit:


  • put the biscuit in the food processor and add melted butter
  • Pulse 2-3 times till coarse crumbs are formed , then set aside. 


For vanilla pudding:


  • Combine sugar, corn starch, vanilla and egg yolk. 
  • Combine milk at low heat till it simmers. 
  • Transfer the mixture to the saucepan, and keep on low heat, and whisk till it thickens. 
  • Remove it from the heat and add cinnamon (optional).  
  • Take out vanilla pudding in a glass bowl and cover with cling film ( this will ensure that skin is not formed on the pudding ). 
  • Set aside. 


For salted caramel:


  • place cream in a small bowl.
  • Add vanilla Essence. 
  • Heat sugar over low medium heat until sugar dissolves.
  • Increase the heat to medium high. 
  • Occasionally swirl pan, brushing down side with a wet pastry brush until the colour turns to deep amber this process will be completed in 5-6 minutes. 
  • Remove from the heat. 
  • Gradually add the vanilla cream mixture, and whisk over medium heat for about 2 minutes until it smoothens and thickens. 
  • Remove from the heat and whisk in butter and salt. 
  • If any crystal hard sugar has formed, stir the caramel over very low heat until the hardened pieces melts and the sauce become smooth, set aside once done. 


Final assembly:


  • Take a large glass dish (8x8 inches) 
  • Place crushed Oreo biscuits at the bottom. 
  • Use a spoon or your hands to press them down. 
  • Pour the vanilla pudding over the biscuits. 
  • Vanilla pudding will still be warm.  
  • Smooth it out with spatula if needed. 
  • Drizzle salted caramel on the vanilla pudding. 
  • Use a butter knife or a toothpick to swirl and make patterns. 
  • Garnish with sliced almonds. 
  • Refrigerate till chilled.
