Chocolate Mousse Cake Recipe
Ingredients for the cake:
- 1 ¾ cups of all-purpose flour
- 2 cups of granulated sugar
- ¾ cup of unsweetened cocoa powder
- 1 ½ teaspoons of baking powder
- 1 ½ teaspoons of baking soda
- 1 teaspoon of salt
- 2 large eggs
- 1 cup of milk
- ½ cup of vegetable oil
- 2 teaspoons of vanilla extract
- 1 cup of boiling water
Ingredients for the chocolate mousse:
- 2 cups of heavy cream (divided)
- 8 ounces of semisweet chocolate (chopped)
- 4 tablespoons of powdered sugar
- 1 teaspoon of vanilla extract
Ingredients for the chocolate ganache:
- 4 ounces of semisweet chocolate (chopped)
- ½ cup of heavy cream
Instructions:
- Let's start by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure the cake doesn't stick.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Give them a good mix until they are well incorporated.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Use an electric mixer or whisk to beat everything together on medium speed for about 2 minutes. You want the batter to be smooth and well combined.
- Now, pour in the boiling water and stir it into the batter. At this point, the batter might become thin, but don't worry, that's normal.
- Take your prepared cake pans and distribute the batter evenly between them. Then, place the pans in the preheated oven and bake for about 30 to 35 minutes. You can check if they're done by inserting a toothpick into the center of the cakes. If it comes out clean, they're ready.
- Once the cakes are baked, remove them from the oven and let them cool in the pans for about 10 minutes. After that, transfer them to a wire rack to cool completely. This will ensure they don't become soggy.
- While the cakes are cooling, let's prepare the chocolate mousse. Take a microwave-safe bowl and heat 1 cup of heavy cream until it's hot but not boiling. Add the chopped semisweet chocolate to the cream and let it sit for about a minute. Then, stir until the chocolate is completely melted and smooth. Allow the chocolate mixture to cool to room temperature.
- In a separate mixing bowl, take the remaining 1 cup of heavy cream and whip it until it starts to thicken. Then, add the powdered sugar and vanilla extract, and continue whipping until soft peaks form. Be careful not to overmix, as we want a light and fluffy mousse.
- Now, it's time to bring the chocolate and whipped cream together. Gently fold the cooled chocolate mixture into the whipped cream until they are well combined. Take your time and make sure to maintain the airiness of the whipped cream.
- Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of the chocolate mousse evenly over the cake. This will create a luscious filling.
- Carefully place the second cake layer on top of the mousse and cover the entire cake with the remaining chocolate mousse. Use a spatula to smooth out the top, making it look beautiful and inviting.
- Let's make the chocolate ganache to add an extra touch of decadence
- For the chocolate ganache, take the 4 ounces of chopped semisweet chocolate and place it in a heatproof bowl. In a small saucepan, heat the ½ cup of heavy cream until it's hot but not boiling. Pour the hot cream over the chopped chocolate and let it sit for about a minute. Then, stir the mixture until the chocolate is completely melted and the ganache is smooth and shiny.
- Now, it's time to pour the ganache over the top of the cake. Start at the center and slowly pour the ganache, allowing it to naturally drip down the sides of the cake. You can use a spoon or an offset spatula to spread the ganache evenly over the top, if needed.
- Once you've poured the ganache, refrigerate the cake for at least 2 hours, or until the mousse is set. This will help the flavors meld together and give the cake a nice, firm texture.
- After the cake has chilled and the mousse is set, it's ready to be served! You can garnish the cake with some grated chocolate, a dusting of cocoa powder, or even fresh berries for an extra pop of color and flavor.
Now, you can enjoy your homemade chocolate mousse cake! It's a delightful dessert that's sure to impress your family and friends.
